Modified Atmosphere Packaging

A normal atmosphere is not suitable for storage purposes due to many reasons improper temperature, higher O2 concentrations, CO2 concentrations, presence of various chemicals, microorganisms, enzymes released by the sample, pests, fungus and moulds formation. So to store a food product you need to change the atmosphere in the packaging so that instead of one month the food may be stored for four months or so. There are various types and blends of atmospheres tested by various scientists. The normal composition of air is 21% oxygen, 78% nitrogen and less than 0.1% carbon dioxide. Modification of the atmosphere within the package by reducing the oxygen < 2%content while increasing the levels of <.1% carbon dioxide and/or nitrogen has been shown to significantly extend the shelf-life of perishable foods at low temperatures.
